60% Chardonnay - 40% Pinot Blanc
Location: from various locations around Poysdorf
Soil: deep, loamy loess soil with a high lime content
Vines: up to 50 years old, medium-high training, 4000 vines/hectare;
Harvest: Selected manual harvest at the end of August 2020
Yield: 20 hl/ha
Vinification: whole-cluster pressing, gentle processing, fermentation in large wooden barrels and subsequent maturation for 8 months in steel tanks
Sparkling: in July 2021, Méthode Traditonnelle – traditional form of bottle fermentation, racked by hand
