Soil: poor loess soil with a high proportion of limestone and gravel
Vines: up to 36 years old, medium-high training, 4000 vines/hectare
Harvest: Selected manual harvest at the end of October 2021
Yield: 40 hl/ha
Vinification: up to 12 hours of maceration, gentle processing, spontaneous fermentation in steel tanks and subsequent maturation on the lees for 30 months.
Ageing: 50% in steel tanks and 50% in large acacia wood barrels
Bottle filling: November 2024
